Ingredients for making veg manchow soup:

Water - 1 liter
Vegetables - Minimum 1 cups (slightly chopped cabbage, carrots, onion leaves)
Hakka noodles - 100 g boiled
Corn flour - 2 tbsp
Oil - 1 tbsp
Finely chopped ginger - 1 inch
Chopped garlic - 2 tbsp
Finely chopped green chillies - 2
Finely chopped onion - 1 small
Finely chopped carrots - ½ small
Finely chopped cabbage - ¼ Cup
Salt - to taste
Pepper - to taste
Coriander powder - 3 tbsp
Soy sauce - 1 tbsp
Red Chili Sauce - 1 tsp
Vinegar - ½ tsp
Corn flour - 2 tbsp

How to make veg manchow soup:

To make veg manchow soup, first put 1 liter of water in a pan, add chopped vegetables. Then cover and boil for 20 minutes so that all the flavors of the vegetables come in the water.

After boiling the vegetables for 20 minutes, the water will be almost half full and its color will be slightly yellow. After 20 minutes, strain the vegetables through a sieve. Separate the vegetables and water from it. The water that comes out of the vegetables can be called the stock of manchow soup.

Now if we are making manchow soup, we need chow for it, let's see how to make chow noodles.

In a bowl, add boiled hakka noodles, 2 tbsp corn flour and mix well. Remember not to put too much corn flour in those noodles. This will spoil the frying oil.Then heat the oil in a pan to avoid. Add cornflour mixed noodles in the heated oil and fry it well. These fried noodles will be crispy.

Then take a pan to make soup from manchow soup, add 1 tbsp oil. Then add ginger, garlic and chillies and simmer for 30 seconds. After 30 seconds, add finely chopped onion, finely chopped carrot, finely chopped cabbage and stir over high heat. If the mixture sticks to the pan, add the prepared stock water (you can also add plain water). After adding stock water, stir for another 30 seconds.

After 30 seconds add salt to taste. Add black pepper powder, soy sauce, red chilli sauce and some onion leaves (you can add mushrooms, capsicum if you want) and stir well for 1 minute.

After 1 minute,put it all remaining stock and mix well. Add another 1/2 glass of water. If you want the soup to be thin, you can add more water.

In a bowl, add 2 tbsp corn flour and 5 tbsp water and mix well. When the soup boils, add the cornflour mixture and stir. So it will be a little thicker and will also notice a difference in taste. (Remember to stir the soup with one hand while adding corn flour so that no lums fall into it.) Bring to a boil after adding corn flour. Then add vinegar and boil for 2 minutes. After 2 minutes, turn off the heat and serve with hot soup fried noodles.
