Ingredients for making Chhole Bhature -

Chickpeas - 250 gms soaked for 4 to 5 hours,
Finely chopped onions - 2,
Finely Chopped Tomatoes - 2,
Khada masala - 2 bay leaves, 1 masala cardamom, 4 cloves, 7 black pepper, 1 tsp mustard seed, 1 tsp cumin,
Red chili powder - 2 tblsp,
Garam masala - 1 tsp,
Turmeric - sp tsp,
Hing - sp tsp,
Kadipatte - 7-8,
Roasted Dried Coconut - ¼ Cup,
Finely chopped cilantro - 1 cup,
Garlic cloves - 6/7,
Ginger - small piece,
2 green chillies,
Oil - 6 tbsp,
Salt - to taste.

Ingredients for making Bhature -

Maida - 2 cups,
Yogurt - ¼ Cup,
Baking soda- sp tsp,
Oil - sp tsp,
Light warm water - ½ cups,
Fine semolina -½ cup,
Sugar - 1 tsp,
Salt - 1 tsp,
Oil - for frying.

Recipe for making Chhole Bhature -

To make chhole bhature,First take flour in a pot, then add curd, semolina, sugar, baking soda and salt and mix all the ingredients.Then mix water in it and knead the dough thicker than the chapati.

Once the dough is kneaded, add a little oil on it so that the dough does not dry out. Now knead the dough for 2 hours.Put soaked chickpeas(chhole) in a cooker on one side, add 1½g glass of water and ½ tsp salt to it and take 3 whistles to the cooker.

Then grind dry coconut, garlic, ginger, cilantro and chilli in a mixer.Then heat oil in a pan, then add mustard seed, cumin, khada masala and fry lightly.Then add curry leaves and onion and stir well.

When onion becomes soft, add tomatoes. Now cook the onion and tomato completely.
Then add red chili powder, turmeric powder and stir well. Once the masala is done, add the dried coconut-garlic mixture and stir well for 2/3 minutes.

Then add boiled chickpeas(chhole) with water (add chickpea water as thick or thin as you like gravy). Then add garam masala, finely chopped cilantro and salt to taste and mix well.

Now cover it and cook for 5 minutes, then turn off the heat. (While frying, turn the heat to low, add the mixture to medium heat, and finally cook over low heat.) Whole vegetables are ready in 30 minutes.

After 2 hours, knead the dough again. Then make balls of desired size and roll them thicker than chapati. Prepare all the bhatures in this way.

Then put oil in a pan on one side, heat the oil well. Fry in hot oil over medium heat. Fry on the other side. Bring light golden salmon color on both sides. Serve hot chhole bhature onion with lemon.
