Dum aloo is a very famous recipe from North India. You may have seen a lot of breathlessness. Today I am going to tell you a method of Dum Aloo recipe.

Ingredients for making Dum Aloo:

Small potatoes - 15–20
Finely chopped onion - 3–4
Finely chopped tomatoes - 3–4
Green Chilies - 2
Ginger - 1 piece
Garlic - 8–10 cloves
Oil - for frying
Coriander powder - 2 tbsp
Red Chili Powder - 1/2 tsp
Cashmere Chili Powder - 1 tbsp
Salt - to taste
Turmeric - a pinch
Garam masala - 2 tbsp
Cumin seeds - 1/2 tsp
Cardamom - 2
Clove - 2
Black pepper - 4-5
Yogurt - 1 cup
Me - 2 tbsp
Sugar 1 tsp (optional)

How to make Dum Aloo:

To make Dum Aloo, first peel all the potatoes. Then cut a small hole in it with a fork. So that the potato gravy goes into it.

Then take the oil in a pan. Add potatoes. Add a pinch of salt and fry all the potatoes till they turn red.

Then put 2 tbsp oil in a pan, add cumin seeds, cardamom, cloves, black pepper. Once the khada masala is slightly cracked, add onion. When onion turns red, add garlic, ginger and green chillies and stir well.

Then add tomatoes. Stir it well. Turn off the gas when the masala starts to release oil. Once the mixture cools down, grind it in a mixer.

Take yoghurt in a bowl and add 3 tbsp cream. Whisk it well. Then add coriander powder, red chilli powder, cashmere chilli powder, turmeric powder and garam masala and mix well.

Then take a pan. Keep the gas on low heat. Add 2 tbsp oil. Then add a bay leaf and onion and tomato spice. Stir in the spices for 2 minutes.

Keep the gas on low heat. Then add curd and spice mixture. After adding the curd and spice mixture, turn the heat to high and keep stirring the mixture till it boils.

When it comes to a boil, turn the heat to low and add a little water and cover for 2-3 minutes. After 2-3 minutes, mix the mixture a little. Then add fried potatoes and salt to the gravy. Mix it well. You can add water as needed. You can add as much gravy as you want. Add water and cover for 3-4 minutes.

Turn off the heat after 3-4 minutes. Then add cilantro and cover. When you want to serve, serve with Dum Aloo.

Tip: If you don't have me at home, add all the spices in the curd and mix it in the gravy.
Prepare Dum Aloo 1 hour before serving. So that the taste of all the spices goes into that potato.
