Medu Vada With Smbar

vada sambar is famous by many names like sambar vada, medu vada. This is a south indian recipe. Let's see how to make this delicious vada sambar.

Ingredients for making vada sambar:

Urad Dal - 2 cups
Tur dal - 1 cup
Finely chopped onion - 1/2 cup
Finely chopped tomatoes - 1/2 cup
Curry leaves - 5-6 petals
Cumin seeds - 1/2 tsp
Mustard - 1/2 tsp
Red Chili Powder - 1 1/2 tsp
Sambar Masala - 1 1/2 tsp
Turmeric - 1/2 tsp
Salt - to taste
Chinch - 1/4 cup
Jaggery - 1/4 cup
Oil - for frying

How to make vada sambar:

To make vada sambar, first soak urad dal in water for 3 hours. After 3 hours, grind the dal in a mixer. Then add salt to taste and cover for 15 to 20 minutes.

To make sambar, first put the tur dal in the cooker. Add 1/2 glass of water. Then take 3-4 whistles. Turn off the gas after 3-4 whistles. Take 1/2 cup water on one side and soak tamarind in it.

Place the pan on the gas on one side. Add 2 tbsp oil. Then add cumin seeds and mustard seeds. When cumin seeds and mustard are cracked, add curry leaves. Then add finely chopped onion.

Once the onion is well reddish soft, add finely chopped tomatoes. When the tomatoes are well cooked and soft, add red chili powder, sambar masala and turmeric. Then shake it well.

Then add cooked dal and mix well. Then add 3-4 teaspoons of soaked tamarind water. Add jaggery and stir well. Then add water as required. (Add water to make the sambar thick or thin.) Then add salt to taste and cook for 3-4 minutes. Turn off the heat after 3-4 minutes.

Then place the pan on one side on the gas. Add oil for frying. Heat the oil well. After soaking for 15-20 minutes, shape the mixture as desired and add it to the heated oil. Fry that vada well reddish.
