The material that come with tea are khari, butter and toast. Nowadays the shop is closed so khari, butter doesn’t get out early. Let's see how to make this crispy khari without oven at home with very samll ingredients.

Ingredients for making khari:

Maida - 1 cup
Dalda Ghee - 3 tbsp
Salt - to taste
Oil - 3 tbsp
Lemon juice - 1/2 tsp

How to make khari:

To make khari, first take ghee in a plate and add 1 tbsp flour. Then whisk the ghee well by hand. Make a creamy paste. Then remove the paste in a bowl.

Then put a plate in a sieve and take 1 cup of flour in it. Add salt and sift the flour well so that the flour becomes lighter. Then add 3 tbsp oil and lemon juice and knead the mixture well. Knead the mixture for 2-3 minutes.

Then add a little water to the mixture and knead the mixture well. Soak khari flour a little thicker than chapati flour.

Knead the dough well. Knead the dough as softly as possible. So your khari will be crispy.When the flour is soft, make 5-6 small balls. Then roll the poli's as thin as you can and make their round layer.
Then take a layer in a plate and apply the creamy ghee you have prepared on all sides of the layer. 

Then put another layer on it. Put creamy ghee on it again and make all the layer one by one. Then fold it around and make a square shape. Then keep it in the fridge for 15 minutes.

After 15 minutes, roll the dough into squares. Do not roll the dough too thin. Then cut into squares to your liking. Then place all the khari pieces in a plate and keep the plate in the fridge for 10 minutes.

Set aside to heat the pan. Heat a frying pan for at least 7-8 minutes.

After 10 minutes, place a plate on the tawa and place the khari pieces on it. Cover tawa and keep the gas on low heat. (Note that the gas should be kept on low heat so that the Khari will be completely baked on the inside.) It takes 20 minutes for the khari to turn red on one side. Bake on one side for 20 minutes. Then bake for 20 minutes on the other side.

Prepare all the khari in this way. I know it takes time to make khari but one can say for sure that this khari becomes delicious even if time goes by.

Note: Even if you don't add lemon to the flour, khari becomes also tasty.
